How to Brew:
Items you will need:

Bring water to a boil - about 200 degrees Fahrenheit.
Select your favorite whole bean coffee you want to enjoy and grind out 34 grams to medium coarse ground.
Open a paper filter into a cone shape so that one side of the cone has three layers, and place it into the top of the Chemex brewer. The thick (three-layer) portion should cover the pouring spout. Pour a little water into the filter to rinse it out (this gets rid of any "papery" taste) then discard that water.
Add the ground coffee to the filter and gently shake it to level out the grounds. Place on scale and tare it to bring scale to 0.
Add 70 grams of water to "bloom" the coffee - just to get the grounds wet. Then wait one minute.
Pro tip: Some scales will "time out" or go inactive within this minute. Just tap the scale or move the Chemex to keep the scale active.
Add an additional 520 grams of water. Start pouring in the center of the grounds, then make slow concentric circles with the water. On the first pour, go to about 400 grams - that is the limit of the Chemex. Once that water has filtered through the grounds, you can add the additional 120 grams. This will give you 1-2 cups of coffee. If you want more, just add 1 gram of coffee for every 15-16 grams of water.
Remove the filter and discard.
Pour coffee into your favorite mug and enjoy!
